In my opinion, Thai food is the spiciest food there is, and Sichuan food will probably come in second. Sichuan cooking is known for using a special black pepper.

And yes, you are correct. However, Sichuan pepper does not grow in intensity after you eat it (I cannot say the same for the Atomic flavor at Wing Stop restaurant).
What it does is give you a burning or tingling sensation when it touches your lips. It could scare you at first (or worse pee your pants), but shortly after that the pepper will leave you with a numb feeling.
If the heat is unbearable to you, eat something sweet to cool it down. Cake can be a perfect solution.
Hot pot is another highlight that comes from Sichuan. Hot pot is a pot filled with boiling water containing spices that is heated with flame, with the flame located in the middle of the pot the majority of the time. When eating hot pot, you can use your chopsticks to dip the raw foods into the pot and cook them.
There is one thing you should keep in mind; you have to make sure that the food is completely cooked. There are a lot of cases where people have gotten food poisoning because the food was not thoroughly cooked.
Most of the time the hot pot will cook with oil, so I doubt you going to have a problem with it. Just be careful.
